Garden Produce 2012

Rather belatedly, I realized it might be nice to have a record of just what we manage to harvest from our three 3x6 raised beds and the zucchini hill. The current "plant count" is as follows:

6 San Marzano Tomato plants
6 Calabrese Pepper Plants
5 Violetta Lunga Eggplant
1 Unknown eggplant (probably Burpee Rosa Bianca)
4 Zucchini
80 Red Marble cippolini
24 Swiss Chard
XX Carrots (Need to thin 'em soon.)

We used up last week's accumulated zucchini to make Zucchini Parmigiana. Now we have almost 3 pounds of eggplant - the tentative plan is to make some Shrimp Stuffed Eggplant in Black Bean Sauce and Polpette di Melanzane. That should take care of this week.

The hot dry weather and my poor watering habits have left the tomatoes in some distress. Blossom end rot, while not a huge problem is present and some of branches of the tomato plants are wilted and dry - probably Fusarium Wilt.Fusarium is a long standing problem in our area, so as much fun as the San Marzanos are, I'll look for a similar variety with resistance for next year.

Apparently the rain was rather heavy last night (or a critter has been poking around) and 2 of the eggplants have been knocked down. I've staked up what remains, but it doesn't look too good. Fortunately, I probably only "need" 2 plants so it's OK.

Now that the zucchini is clearly out of control Beth is making Chocolate Zucchini Bread and I'll start freezing 2 cup quantities of grated zucchini whenever we get a couple big 'uns.

It probably should be obvious, but if you pick zucchini the day after it rains you'll find they are a great deal wetter than normal. And when you cook 'em up, they shrink... a lot.

The summer garden is winding down with the demise of the tomato plants and all but a couple eggplants. There's no zucchini because I accidentally let a couple grow to maturity and the plants started to shut down. I cut those off a couple days ago and they're starting to generate fresh flowers, so there's still hope for them. However! The Calabrese peppers are coming into their own. All six plants are covered in fruit and today I harvested:

This first batch will be stuffed with tuna and preserved in olive oil.

Well, it took a couple weeks and after one last pop, it looks like the zucchini is about done for the season. We might get 2 or 3 more, but new growth has pretty much come to a halt. The peppers are still going strong. In another week I should have enough to preserve. This time I'll use pint jars, since opening a quart is a little bit much for the two of us. We should see a few more eggplant as well.

Over in the back beds the tomatoes are now cleared and the soil prepped for fall planting:

We also have a batch of saffron bulbs to plant.
